Quiche

Quiche is another all time favourite at home. It is great for Sunday brunch, light lunch or even dinner accompanied with a leafy salad.

It is very simple to make! The basic ingredients for a quiche are the pastry, eggs and milk or cream. You can then opt for a vegetarian version or add meat if you wish. Actually you can top it up with whatever you fancy.

Very often, I make it using leftover pastry, which I would have put in my freezer. If you want to make your own pastry (which I encourage you to do), you can find my recipe for a shortcrust pastry here.

I like to blind bake the pastry first, this ensures that the crust does not get wet and soggy.

Here is an example of a simple quiche I prepared for Sunday brunch!

Quiche

  • Servings: 2

Perfect for Sunday brunch, light lunch or even dinner!


Ingredients

  • Shortcrust pastry
  • 3 egg
  • 200ml milk/cream
  • Hard cheese, grated (I like to use Grana Padano)
  • Carrots, shredded
  • Zucchini, julienned
  • Red pepper, chopped
  • Spring onion, chopped
  • Peas
  • Salt and pepper

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Roll out the pastry and fit it in a round pie dish. Cover with foil and put some baking beans/rice as weight. Bake for 25 minutes.
  3. In a bowl, beat the eggs and milk together. Add salt and pepper to taste.
  4. Once the pastry is done, layer the vegetables and cheese in the bottom and then pour the egg mixture.
  5. Return to the oven and bake for another 25 minutes or until the eggs are set.
  6. Let it cool for 10 minutes before cutting into wedges.


Note: If you are adding bacon/smoked ham, I suggest that you fry it a little bit in a pan before putting it into the quiche. Like this you can discard any excessive fat.
